This crunchy green split pea salad with rice, radishes, and mint really combines the heartiness of split peas with the freshness of avocado, radishes, and fresh mint. This recipe is a great salad to make for lunches, or to bring to a pot luck this summer.

Green Split Peas: For this recipe I used green split peas from Silo. These are high in protein and fibre, and super versatile. You can add them to soups, salads (like this), hummus, falafel, the list goes on. They are so handy to have in the pantry for a quick protein source.

Radishes: I love the earthiness that radishes add to this pea salad but the radishes also add antioxidants and minerals like calcium and potassium to this recipe.

Mint: Fresh mint just smells so amazing, but it also tastes great in salads too! Mint can also be good for freshening your breath, and to help an upset, or bloated stomach.


How to make green split pea salad:


  1. Into a large bowl, combine the peas, onion powder, garlic powder, salt and pepper. Toss till combined.

 

  1. Place the seasoned peas onto a large serving platter and add the rice, feta, avocado, fresh prepared radishes, lemon juice, olive oil and mint. Gently toss or stir to combine and check for seasoning.  Enjoy!

How can I make this pea salad vegan? Make this vegan by replacing the feta with dairy-free feta!

 

I don’t have mint on hand! Add any extra herbs or spices to this dish that you desire.

 

Storage: Store this salad in the fridge for 3 - 4 days in an airtight container.

 

I don’t like radishes: You can legit swap these for any veggie like carrots, or cucumber.

Crunchy Green Split Pea Salad with Rice, Radishes and Mint

Cook Time: 30 minutes

Serves: 4

 

Ingredients:

 

  • 2 cups of cooked SIlo Green Split Peas (follow package instructions)
  • 1 tbsp. Onion powder
  • 1 tbsp. Garlic powder
  • 1 tsp sea salt
  • 1/1 tsp black pepper
  • 2 cups of cooked Rice
  • ¼ cup crumbled feta cheese
  • 1 avocado, cored/peeled and sliced
  • 1 cup fresh radishes, quartered and stems removed
  • Juice of 1 lemon
  • 3 tbsp. Olive oil
  • Season to taste with salt
  • ¼ cup fresh mint, chopped or whole
